Real BBQ
Using the finest Irish Beef and Pork, we have adopted the Texan Style of BBQ to provide a unique and authentic dining experience. We use a combination of charcoal and hardwoods to slow cook our meats in our custom built smokers.
Beef Brisket is one of the great American BBQ specialties. And with the quality of our Irish beef this is an amazing BBQ item. We take a 8-10kg brisket and apply some gentle seasoning and secret spices and we then slow cook the meat for up to 18 hours at a low temperature. We use charcoal and hard woods (Oak) to cook with and this imparts a wonderful smoke flavor to our meat. Why the long cooking process?? The lesser known Brisket may be better known to you as the cut of meat used to produce corned beef many years ago. As with the corning process, this meat cut is very tough and requires a process to tenderize the meat. We find that cooking Low and Slow we bring the meat to a critical internal temperature where by the collagen (tough stuff) turns to gelatin (soft juicy flavorful). The end result is worth waiting for. One of the best tasting Beef cuts.
Similarly for Pork one of the best parts to the animal is the shoulder. A complex web of muscle in this area make it difficult to find and easy to cook cuts. Roasting this whole applying the same method as to the beef and the pork begins to cook in its own natural fat as it renders off the meat. Sometimes taking upwards of 18 hours, the end result is fork tender pork, with true flavor.
I can go on and on and I will soon with some videos, but we source wonderful sausages for our grill, and we do some great chicken BBQ, infusing moisture and flavor with brine and slow and gentle roasting.
Ribs are a special item and sourcing the best ribs are key. But there is a magical sauce that transforms the rib eating experience. Yes it’s that good, and we keep it top secret. But it creates an endorphin rush in those that indulge in our ribs..... Promise.....
We have an awesome Grill on our trailer, so awesome that it actually bakes the most amazing pizzas. Thin crust stone baked fresh pizza, it will rival any wood fired pizza oven..... actually.... it is a wood fired pizza oven ;-)
